slide1Welcome to our first blog post! For our first post I think I’m going to venture back at time at tell the story in more detail about how Grilled Cheese & Co came to be. It all started back in August of 2005. In the wee hours around 2am in the morning I had a dream that was extremely vivid. I woke up from the dream around 2:30 in the morning and was like wow why did I dream about me selling grilled cheese in a street corner on an airstream trailer. I can remember a long line of people clamoring to get one of my buttery treats. After processing this I went back to bed. My partner Matt arrived at 5:30am to pick me up for a golf trip we had planned. We were heading up to Penn National Golf Club in Fayetteville, Pennsylvania for a day of 36 holes of golf. Matt actually arrived early and was kinda upset. He began to tell me about how he was in a pickle because James his older brother had just left him hanging. James had accepted a job at the prestigious Black Mountain Dude Ranch in Colorado. Matt didn’t know what to do, see he had bought light street tavern a bar in Federal Hill with the premise that he would invest and turn the bar into a great bar restaurant with James. Well after James left him he was stuck and didn’t know what to do.

So as Matt continued to tell me all of this I mentioned the dream I had earlier that morning. All of a sudden it was like lighting had struck. We both were like let’s turn that bar into a grilled cheese restaurant and bar. I just happened to be fait as Grilled Cheese was Matts favorite food. So we arrived at the golf course and continued to talk about the idea for the entire day and 36 holes of golf that we played that day. We decided on that day August 19, 2005 that we were going to do this. Matt actually had the idea that day for the name which was Grilled Cheese Company. Although over the next couple of weeks it evolved into Grilled Cheese & Co. So after that trip we set out to develop our logo and some branding for the business. I worked on some logo concepts and went through multiple rounds of logos until we landed on the logo that we still use to this day. So we had our logo, applied for a trademark once we put it into use that September and then setup our company in October of 2005. And so the journey began…
